Glycemic Index vs Glycemic Load: What They Mean

Glycemic index (GI) ranks a carbohydrate food by how much it raises blood glucose per gram of carbohydrate, with glucose set at 100. Glycemic load (GL) adds the amount eaten: GL = GI × grams of carbohydrate per serving ÷ 100. GL is usually the more useful number because it reflects a real portion.
Carbohydrates affect blood sugar differently depending on the food. Two metrics try to capture this: glycemic index and glycemic load. They are often confused, but they answer different questions. Understanding both helps you interpret nutrition claims without oversimplifying.
Glycemic Index (GI)
GI compares foods that each contain 50 g of digestible carbohydrate, measuring the blood-glucose response against a reference (pure glucose or white bread, scored 100). A food's GI tells you how quickly its carbohydrate tends to enter the blood per gram of carbohydrate:
- Low GI: 55 or below
- Medium GI: 56–69
- High GI: 70 or above
Steel-cut oats, lentils, and most non-starchy vegetables are low GI; white bread and many breakfast cereals are high GI.
Glycemic Load (GL)
The problem with GI is that it ignores portion size and how much carbohydrate is actually in a serving. Watermelon has a high GI, but a typical slice contains little carbohydrate, so its glycemic load is modest. Glycemic load fixes this:
GL = GI × grams of carbohydrate in the serving ÷ 100

Why GL Is Usually More Useful
Because GL includes the actual carbohydrate amount, it better reflects the blood-sugar impact of a real meal. A small amount of a high-GI food may have a lower GL than a large amount of a moderate-GI food. For everyday choices, GL (or simply "how much and what kind of carb") is the more practical lens.
Practical Limits
- Mixed meals blunt the effect. Fat, protein, fiber, and acidity all slow glucose absorption, so a high-GI food eaten with a meal behaves differently than alone.
- Cooking and ripeness matter. More cooking and riper fruit generally raise GI.
- Individual response varies. The same food can affect two people's glucose differently.
